Disney Cooking Adventure Week #3 – Mediterranean Chicken

Hello everyone! I tried this recipe last Wednesday but due to the craziness of midterms I haven’t gotten around to typing up a blog post until now! So, last week’s recipe was Mediterranean Chicken from the Crystal Palace in the Magic Kingdom at Walt Disney World. I got this recipe off of allears.net and I will post it below as well.

Mediterranean Chicken , Crystal Palace, Magic Kingdom

Yield: 47 oz (one small paella pan)

Ingredients
1 ounce olive oil
1.5 pounds chicken breast cut into small strips
½ ounce minced garlic (paper-thin)

*I actually forgot to do this step but the chicken ended up tasting amazing without it!

12 ounces gourmet tomatoes (1-inch dice)

*Roma tomatoes work just fine

6 ounces feta cheese (rough crumbles)
3 ounces Kalamata olives (roughly chopped)
½ ounce fresh basil (very thin chiffonade)
salt and pepper
Method of Preparation
Sauté chicken breast strips in olive oil for 5 minutes. Season lightly with salt and black pepper (feta cheese and olives are already high in salt). Add paper-thin minced garlic and sauté for 2 more minutes without coloration. Add diced tomatoes, then feta cheese crumbles and Kalamata olives. Add chiffonade of fresh basil at the end.

*In order to make a more complete meal I made rice to go along with the chicken.

Check seasoning.

Total cooking time is approximately 10 minutes.

When I first saw this recipe I was super nervous about just seasoning with salt and pepper primarily. In the past I have typically added too much salt or basically left my food flavorless. Yet, when I made this dish the chicken was nice and juicy and had the perfect amount of seasoning. The feta, kalamata olives, and tomatoes add some really great flavors to the dish. For those who don’t like the topping ingredients-like my sister- simply add shredded cheese and anything else you would like. This recipe allows for lots of different interpretations although I prefer the original toppings! Overall this is by far my favorite dish I have ever cooked and I will most likely be making it again soon!
